This is the final installment in our “Bee’s Knees” trio of barrels from Boone County. When we shop for barrels we look for three things: Cask Strength, Non-Chill-Filtered, Age-Stated. It seems like a simple wish-list, but it’s surprisingly difficult to find all three these days. When we tasted this 12-year NCF cask strength straight bourbon, we threw caution to the wind and bought all three barrels that sat in front of us. We’d never done that before, but it’s just so rare these days to find quality casks of 12-year straight-from-the-barrel MGP bourbon. Barrel #3 comes in at just over 109 proof. It’s the most drinkable of the lineup, combining the sweet richness from #1 with the beautiful wood and oak of #2. The result is a stunning bourbon.

The first thing you’ll notice is the super dark color of this barrel, greeting you with a deep bronze glow. Swirling it in the glass you’ll see wide legs taking their time to slowly run down the sides. Leave this one in the glass for 15 minutes to open up and it fills the room with vanilla, molasses, and subtle banana and cinnamon. A few of us sipping on these will have people sniffing around from down the hall and dropping by to join the party. The palate greets you with deep mature white oak, char, and herbal notes that drew us into barrel #1, however the flavors are more subtle and it’s not nearly as hot on the tongue. Little drops of citrus fruit, baking spices, cloves and brown sugar, and a tiny bit of spice - pink peppercorns and red chiles, round out the flavor. It’s a very deep and layered taste profile and we could go on and on discovering different elements, but you get the idea! The finish lasts super long for a bourbon and all the sweets, wood, fruits, and spices come together warming your chest and rising up through your nose.

A wonderful way to wrap up favorite series of barrels this year, Bee’s Knees 3 is a real treat. The perfect Friday night dram, this one will command a special spot on your whiskey shelf. Like we’ve said for all the Bee’s Knees, an absolute gem. Don’t miss out!
